Artichoke with meat recipe

Ingredients

  • • 12 artichoke heads
  • • 14 ounces minced meat
  • • 1 medium onion, finely chopped
  • • 1/2 cup fried pine nuts
  • • 2 tablespoons butter for frying meat and onion
  • • 1/2 teaspoon salt
  • • 1/4 cup lemon juice
  • • 1 cup finely chopped boiled carrots, optional
  • • A dash of ground pepper
  • • A dash of ground allspice
  • • A dash of flour
  • • 2 cups water for cooking artichokes

Instructions

  1. • Cover artichoke heads with water, flour and lemon juice.
  2. • Boil for 10 minutes.
  3. • Remove and fry in some butter.
  4. • Place aside.
  5. • Fry onion until soft.
  6. • Stir in meat, salt and spice.
  7. • Cook on low heat for 15 minutes, stirring occasionally.
  8. • Remove meat from heat.
  9. • Stir in carrots.
  10. • Distribute meat mixture over prepared artichokes.
  11. • Place in a tray. Add water.
  12. • Cover and cook over moderate heat for 15 minutes or until tender.
  13. • Serve artichokes hot, garnished with pine nuts and accompanied by cooked rice, radishes and lemon.
