Bacon Scallop with Sauteed Tatsoi

Bacon Scallop with Sauteed Tatsoi

Tatsoi is a green leaf vegetable that is closely related to cabbages. It grows abundantly in certain parts of Asia, but has quietly spread and has been used as an ingredient for most cuisines around the world. Tatsoi is distinct in appearance from other members of the cabbage family in that it has spoon-like shaped leaves with a much darker shade of green. Tatsoi is rich in calcium as well as containing a lot of vitamin A and C. Studies have also shown that tatsoi greatly helps in fighting the onset of cancer cells.
