Bacon Scallop with Sauteed Tatsoi

Tatsoi is a green leaf vegetable that is closely related to cabbages. It grows abundantly in certain parts of Asia, but has quietly spread and has been used as an ingredient for most cuisines around the world. Tatsoi is distinct in appearance from other members of the cabbage family in that it has spoon-like shaped leaves with a much darker shade of green. Tatsoi is rich in calcium as well as containing a lot of vitamin A and C. Studies have also shown that tatsoi greatly helps in fighting the onset of cancer cells. For this recipe, we will be sautéing tatsoi together with scallops and bacon for a delicious and healthy meal



-6 cups fresh green tatsoi

-1 dozen sea scallops

-4 strips bacon

-1 white onion, finely chopped

-4 tablespoons balsamic vinegar

-1 clove garlic, crushed

-vegetable oil as needed (for frying)

-salt to taste

-pepper to taste


In a pan, heat some vegetable oil then fry the bacon for 5 minutes. Remove from heat when slightly crisp and set aside. Sautee the onions, garlic sea scallops, and tatsoi until the leaves are wilted. Add the balsamic vinegar then season with salt and pepper. Remove from heat and add the bacon strips. Serve.
