Ingredients

  • 1/2 cup of butter
  • 2/3 cup of sugar
  • 2 egg yolks
  • 2 cups of silfted flour
  • 1/4 tsp. salt
  • Tart currant jelly
  • Vanilla Extract

Instructions

  1. Cream butter with sugar until smooth. Beat in egg yolks one at a time, until smooth.
  2. Resift flour twice with salt. Gradually add to the butter mixture. Beat again when all the flour has been added, and finally beat in vanilla extract.
  3. Grease and flour a cookie sheet. Scoop out 1/2 teaspoon of dough at a time. Roll between your palms into small "butter balls." Give them room to spread by placing them on the cookie sheet about 1 inch apart and i inch from the edge. With the tip of a finger, form a depression on the top of each ball. Fill each depression with a small amount of tart jelly. Bake in a preheated oven at 325 degrees for 12 to 13 minutes. Watch them carefully and bake only untill they are sand colored. The cookies are done when they are slightly browned underneath.
