Baobab (Kuka) Pineapple Tart
The Baobab fruit comes from a variety of trees that hail from Africa and Australia. This tree is also known as “The Tree of Life”, as it provides food, shelter, and clothing. The baobab fruit is rich in antioxidants, potassium, vitamin C, magnesium and calcium. The fruit is also low in fat as well as a good source of dietary fiber. For this recipe, we will be using baobab and pineapple to make a delicious dessert tart.
-4 cups flour
-2 pineapples cut into small round slices
-2 cups vegetable or coconut oil
-1 baobab fruit, ground into paste
-4 large bananas
-1 teaspoon salt
-1 ½ cup sugar
-1 cup water
Mix the flour, salt, water, sugar and oil in a bowl and mix until the dough becomes elastic. Bake the crust in a cake tin in a 400 degree Fahrenheit preheated oven for 45 minutes. Set aside.
Place the pineapples into the crust; make sure to arrange it evenly for consistency. Slice the bananas and heap on top of the pineapples. Layer with the baobab fruit then place the tart in the refrigerator or chiller. Serve after 1 hour, or when the tart is fully cooled.
