Bell pepper with tomatoes recipe

Ingredients

  • • 16 ounces sweet green bell peppers, diced
  • • 1 teaspoon dried coriander
  • • 1/4 cup finely chopped fresh coriander
  • • 32 ounces tomatoes, peeled and chopped
  • • 1 small onion, finely chopped
  • • 5 cloves garlic crushed with 1 teaspoon salt, as desired
  • • 1/4 teaspoon ground piquant red pepper
  • • 1/4 cup olive or vegetable oil

Instructions

  1. • Fry bell peppers in oil for 10 minutes.
  2. • Stir in onion, garlic, dry and fresh coriander over medium heat.
  3. • Add tomatoes, ground pepper and simmer till bell pepper is tender.
  4. • Serve cold.
