Bitter Gourd Curry

Bitter gourds are one of the earliest cultivated plants to be used as vegetable crop. It is a vine that is widely grown in tropical and subtropical climates. It is featured extensively in Asian and Indian cuisine.



-2 pieces of bitter gourds cut into 1-inch strips

-1 white onion, coarsely chopped

-2 cloves garlic, minced

-1 tomato, chopped

-2 red chillies, chopped

-2 teaspoons red chilli powder

-2 teaspoons coriander powder

-1 tablespoon curry powder

-½ cup fresh coconut milk

-½ cup mint leaves

-salt to taste

-pepper to taste

-vegetable oil as needed



Heat water in a pot or saucepan and add salt. Blanch the bitter melons for 1 minute then set aside. Heat oil in a pan or wok then fry the onion, garlic, tomtoes and chillis for 1-2 minutes. Add the biter gourd then fry until it changes to a light green hue. Add the coriander powder and curry powder then season with salt and pepper. Add the coconut milk then bring to a simmer. Cover the dish then cook for 7-10 minutes. Garnish with mint leaves then serve over rice. You may also choose to add more freshly chopped chillis if you desire a hotter flavor.
