Black Beans with Sage and Garlic

Ingredients

  • 2 teaspoons olive oil
  • 2 cloves garlic, minced
  • 1 green pepper, minced
  • 1 bay leaf
  • 2 cups cooked black beans
  • 1 teaspoon dried sage
  • splash of hot pepper sauce, or to taste

Instructions

  1. * In a large nonstick skillet. heat oil over medium heat. Then add garlic, peppers, and bay leaf and saute until peppers have just begun to soften, about 4 minutes. (If garlic begins to brown and burn, reduce heat.)
  2. * Add beans, sage, and hot pepper sauce and saute until heated through, about 3 minutes. Remove bay leaf and serve hot as an appetizer or side dish with garlic bread or warm, soft corn tortillas.
  3. * Makes 4 servings
