Celery Soup

Celery is a very versatile plant. It’s used both as a spice and a vegetable. It’s also very healthy, containing high amounts of vitamins and minerals as well as a person’s daily fiber needs. Its crunchy stalks are best known as the part of celery most often used for many recipes. Celery is also used as the main ingredient for a hearty soup that’s both tasty and easy to make.  



-500 grams celery, diced

-1 large potato, diced

-1 clove garlic, finely minced

-1 red onion, diced

-1 cup cooking cream

-½ cup dill

-1 tablespoon olive oil

-Salt to taste

-Ground pepper to taste



In a large or medium sized saucepan heat the olive oilthen melt the butter into the oil once hot. Add the celery, potatoes, and onions and cook for 5-10 minutes. Season with salt and pepper, and then add the cooking cream. Bring to a boil. Reduce the heat to bring it down to simmer constantly stirring the soup while gradually mixing in the dill..Once the potatoes are tender, remove from heat. Puree the soup using a blender until it reaches a silky smooth consistency.Serve with a piece of freshly baked bread.
