Celtuce Salad with Spring Onions
Celtuce is a type of vegetable that was cultivated through lettuce, and is primarily featured in Chinese cuisine. Known as “wossun” in Chinese, Celtuce most notably differs from other varieties of lettuce, as it is harvested for its relatively thick stem rather than for its leaves. They are crunchy and flavored with a distinctly mildly sweet and moist taste. Celtuce is also a healthy addition to one’s diet, being an abundant source of vitamins, minerals, fiber and iron.Stir frying is a popular method for cooking this vegetable, but it can also be served fresh. Here’s a salad recipe using celtuse for a light low-calorie meal that’s fast and easy to make.
-1 celtuce stem
-2 tablespoons vegetable oil
-1 ½ teaspoon sesame oil
-Salt to taste
-4 spring onions
Make sure to peel the celtuce stem thoroughly. Shred the stem into very thin pieces, making it almost similar to noodles in appearance. Add salt just enough to let it act as a marinade then let the salad sit for 10-15 minutes to absorb flavor. Finely chop the spring onions and garnish on the celtuce. Heat the sesame oil separately and drizzle on the salad.
