Chaya Juice is a traditional Mexican drink that’s very healthy and refreshing. Chaya is a shrub that grows abundantly in South America and is difficult to acquire outside the continent. However, it is highly sought afteras it is very healthy. Chaya contains a high amount of vitamins and minerals. Chaya is also a good source of protein, calcium and antioxidants. It has a much higher iron content in comparison to other green leafy vegetables. Be wary though, when raw, chaya contains toxic elements and stinging hairs.
1 cup chaya leaves, finely chopped
25 grams mint leaves, finely chopped
1 cup pineapple juice
1 cup freshly squeezed lemon
1 cup fresh orange juice
2 tablespoons sugar cane syrup
Boil the chaya leaves in a saucepan for 1-2 minutes. Remove from heat and set aside to cool. Once cool, place the chaya leaves in a blender together with the pineapple, lemon, and orange juice. Puree until the mixture reaches a smooth consistency. Using a cocktail strainer to remove the solid bits of pulp from the juice. Use sugar cane syrup to sweeten the drink. Pour in a glass with ice and garnish liberally with the mint leaves.
