Chayote with Egg and Cheese
Chayote is a type of gourd vegetable closely related to cucumbers, melon and squash. Chayote has a multitude of health benefits. They are an excellent source of vitamins, minerals and nutrients. Chayote is also high in dietary fiber as well as antioxidants. Some of its health benefits include fighting of certain types of cancer helps maintain signs of aging, as well as preventing certain diseases. They are beneficial especially for mothers in the early stages of child bearing. For this recipe, we will be preparing chayote with egg and cheese.
500 grams chayote, peeled and sliced into bite-sized pieces
1 stick butter
3 onions, finely minced
2 cloves garlic, finely minced
2 slices cheddar cheese
salt to taste
pepper to taste
Preheat your oven at 400 degrees Fahrenheit. Bring a pot of water to boil, then let the chayote simmer for 15-20 minutes, or until they turn tender. Remove from heat and drain the water. Set the chayote aside.
Melt the butter in a pan and fry the onions and garlic for 4-5 minutes. Add the chayote, stirring constantly then season with salt and pepper. Next, add the eggs and stir well. Remove from heat and place in a baking tray. Grate the cheese on top and put in the oven. Bake the chayote for 5 minutes, or until the cheese has melted then serve.
