Chicken and Brussel Sprouts Casserole

Casseroles are a type of comfort food that is popularly featured in close-knit gatherings with friends and family.Casseroles are traditionally made with assortments ofmeat and vegetables. 1 kilogrambrussel sprouts halved

1kilogram chicken thighs skinned, deboned, cut in small pieces

3 teaspoons extra virgin olive oil

½ cup chicken stock

½ cup milk

3 cloves of garlic, minced

1 whole onion, finely chopped

salt and pepper to taste

1 cup grated parmesan cheese  


Preheat theoven at450 F. In a medium sized pan, heat the olive oil andsautee garlic and onionsfor 1 minute. Add the chicken and cook for another 2-5 minutes.Set aside In a saucepan, bring the chicken stock to a simmer over medium heat, gradually adding the milk. Separately, boil the brussel sprouts for 15 minutes. Drain the brussel sprouts and together with the chicken, spread evenly on a large baking dish. Layer parmesan cheese on top of the casserole and season with salt and pepper. Cover the dish with foil.Place in the oven for 25-30 minutes. Check the casserole
