Chinese Napa Cabbage Salad
Napa cabbage is a variety of Chinese cabbage that is native to China and is widely used in Asian cuisine. It grows seasonally in cool climates. Napa cabbage is oblong-shaped, with crisp light green leaves that are used in soups, stews, stir fries and salads. It is popularly known as the main ingredient for the iconic Korean dish, kimchi. For this recipe, we will be using fresh Chinese Napa Cabbage in a salad that helps lower cholesterol levels as well as being a great source of vitamins A, C, and K.
1 whole head of Chinese Napa Cabbage, sliced into thin strips
1 whole onion chopped
½ cup vegetable oil
2 tablespoons soy sauce
½ cup apple cider vinegar
½ cup freshly squeezed lime juice
salt to taste
pepper to taste
Wash the Chinese Napa cabbage thoroughly. Place in a salad bowl together with the onions and toss. Set aside.
In a bowl, mix the vegetable oil, soy sauce, lime juice and apple cider vinegar and whisk vigorously. Season with salt and pepper. Drizzle the sauce on top of the salad and serve. You may choose to add pieces of boneless chicken breast to the salad for variety.
