Chinese Stewed Winter Melon
The winter melon is popularly featured in Asian and Indian cuisine. Though it is called as such, they actually require a very hot climate for them to grow. However they can be kept and stored for a whole year, thus making them an ideal food source for the “winter” season. For this recipe, we will be using winter melon as the main ingredient for a traditional Chinese dish.
1 kilogram winter melon, chopped into bite size pieces
½ cup onion, finely chopped
½ cup ginger, minced
4 cloves garlic, minced
¼ cup soy sauce
¼ cup cornstarch
salt to taste
pepper to taste
water as needed
vegetable oil as needed
Fill a wok with water and bring to a boil. Blanch the winter melon for 1-2 minutes then remove and place in a bowl. Discard the water then set the winter melon aside.
In a separate bowl, combine the onions, ginger, garlic, soy sauce and cornstarch. Mix well.
Heat vegetable oil in the wok then toss in the mixture and cook for 1 minute. Add the blanched winter melon then stir-fry for 1-2 minutes. Stir the dish constantly so that the winter melon absorbs the flavor of the sauce. Remove from heat then serve.
