Ingredients

  • 2 Tablesp Butter
  • Add, Stir and Simmer for 3 minutes:
  • 2 Tablesp Minced Onion
  • 1/2c Soft Bread Crumbs
  • Combine and Add:
  • 2 beaten eggs
  • 1/2c Cream
  • 2c Canned Clams
  • 1/2c minced celery
  • 1/2 teasp dry mustard
  • 1 tablesp lemon juice
  • 2 tablesps chopped parseley
  • 1/2 teasp salt
  • 1/2 teasp paprika

Instructions

  1. * Chill this mixture for 2 hours. Shape into cakes. Dust them lightly with: Flour on Bread Crumbs.
  2. * Melt in a skillet: 1 tablesp butter.
  3. * Quickly brown the cakes on both sides.
  4. * Lower the heat and cook the cakes slowly for about 6 min. longer. You may dip the cakes in crumbs, then in 1 egg diluted with 1 tablesp water and again in crumbs. If you do, permit them to dry for 15 min., then fry until golden in deep fat heated to 375 degrees.
