Creamy, Dreamy Cheesecake

Ingredients

  • Crust:
  • 1 cup crushed graham cracker crumbs
  • 1/2 cup sugar
  • 4 Tlbs. margarine, melted
  • Filling:
  • 3 8oz. packages cream cheese, softened
  • 1 cup sugar
  • 4 medium eggs
  • 1/2 pint sour cream (8oz.)
  • 2 Tlbs. flour
  • 2 tsp. vanilla
  • 1 tsp. lemon juice
  • 1 cup heavy cream (8oz.

Instructions

  1. Grease bottom of 10 inch springform pan. Combine all crust ingredients and pat down firmly in bottom of pan. Place in freezer while making the rest of the cake.
  2. With electric mixer, beat filling ingredients in order listed, adding each one by one and beating until thoroughly mixed. Pour into prepared pan and bake in preheated 325 degree oven for 20 minutes. Lower heat to 300 degrees and bake an additional 40 minutes. Turn oven off and let cake cool in closed oven for one hour. Cool on a rack to room temperature. After 45 minutes, remove sides of pan. Cover and refrigerate. Cheese cake has to be made the day before so it has time to firm up.
