Cress Pesto

Pesto is a green pasta sauce coming from Italian cuisine. It mainly consists of garlic, salt and basil. Basil is traditionally used for pesto, but cress can be substituted instead, if you’re feeling the need to explore other flavors and ingredients. Cress is an herb that grows in various parts of Europe and America. It is has been cultivated for hundreds of years, chiefly because they’re very easy to grow and can be used for a wide range of dishes.



1 bunch cress

1 clove crushed garlic

1 cup olive oil

Salt to taste

Pepper to taste



Use a mortar and pestle, a blender, or a food processor to crush the cress and the garlic. Make sure that they’re properly crushed to attain a fine consistency for your sauce. Once you’re done mashing the cress and the garlic, place in a bowl and gradually add the olive oil. Season the pesto with a dash of salt and pepper. You may store the cress pesto sauce in sealed container. It will keep for a week in a chiller. The cress pesto sauce can be used for pasta, or can be eaten as an appetizer in top of freshly baked bread.
