Crunchy Zucchini Rounds with Sun Dried Tomatoes and Goat Cheese


Zucchinis are a very healthy vegetable packed plenty of vitamins, minerals and nutrients that promote overall health. Some of its health benefits include aiding in weigh loss and preventing certain types of disease. In particular, zucchinis are loaded with vitamin C, which helps fight off scurvy. They also help to prevent certain types of cancer and hearth disease. Zucchinis are also known to ward of infections by boosting the immune system, as well as alleviating symptoms of joint pain and arthritis. For this recipe, we will be using zucchini as the main ingredient for a delicious snack that’s served fresh.



500 grams zucchini, cut into 1-inch, round and flat pieces

200 grams sun-dried tomatoes

1 cup goat cheese, crumbled

¼ cup fresh chives, minced

salt to taste

pepper to taste

extra virgin olive oil as needed



Layer the zucchini slices in a tray or plate then season with salt and pepper then set aside.

In a bowl, combine the goat cheese and chives then season with a salt and pepper.

Place a tiny piece of tomato on top of the zucchini, and then add a dollop of the mixture. Drizzle the zucchini rounds with olive oil and serve.
