Cucumber Salad

Cucumbers are mostly comprised of water, which can help in hydration. The rest of the vegetable is packed with vitamins and minerals, notably vitamins K,B and C as well as copper, potassium and manganese. This gives the cucumber many health benefits as well as aiding in weight loss for those who are looking to lose a few pounds. Some of its health benefits include reducing the risk of certain types cancer, promotes a healthy digestive system, and antioxidants for better overall health. Studies have shown that cucumbers also have anti-inflammation properties, as well as having an added benefit of freshening your breath since it fights off odor causing bacteria in your mouth. Cucumbers are best eaten fresh. For this recipe, we will be using cucumbers for a healthy, light and refreshing salad.



2 cucumbers sliced into thin pieces

1 tomato, sliced

1 teaspoon brown sugar

½ cup apple cider vinegar

½ cup water

chopped parsley as desired

salt to taste

pepper to taste



Place the cucumbers and tomato in a salad bowl. Add the apple cider and water. Season with salt and pepper until the desired flavor is attained. Add sugar then toss. You may store in the refrigerator or chiller before serving.
