Eggplants are a popular vegetable the world over. They are widely used in many cuisines, with many varieties depending on which region of the planet you are in. They are very healthy and nutritious, containing vitamins and minerals, though not noted for abundance in a particular nutrient. Studies have shown that eggplants have many health benefits, including preventing certain types of cancer, as well as being a great source of dietary fiber. For this recipe, we will be using the eggplant as the main ingredient for tasty and healthy sandwiches.
2 eggplants, sliced
2 tomatoes, sliced
4 cloves garlic, minced
1 cup feta cheese, crumbled
½ cup fresh basil leaves, chopped
1 cup mayonnaise
olive oil as needed
salt as needed
pepper as needed
Slice the eggplants into thin pieces then brush with olive oil. Place them in a baking tray then cover with aluminum foil. Bake them in a preheated oven at 300 degrees Fahrenheit for 5-10 minutes, or until they turn tender. Remove from the oven then place in a bowl.
Add the tomatoes, garlic, feta cheese and mayonnaise and mix well. Season with salt and pepper then serve over bread and garnish with fresh basil leaves.
