Feta and Pea shoot Fritters

Pea shoots, quite simply, are the leaves of the Pea plant, and are grown during the summer season. They are used an ingredient in many traditional dishes and serve as an alternative green for salads as well. For this recipe, we will be making fritters using pea shoots as the main ingredient, for an easy to prepare and hearty meal.


200 grams Pea shoots
500 grams potatoes
¼ cup all purpose flour
200 grams feta cheese
4 tablespoons extra virgin olive oil
½ stick butter
4 eggs
salt to taste
pepper to taste


In a large pot, bring water to a boil and place potatoes. Cook until tender then mash with half the butter. Season with salt and pepper then set aside.
Chop the pea shoots into tiny pieces and combine with the mashed potatoes. Heat the rest of the butter and oil.
Fry the potato and pea shoot mixture. Press down with a spatula until flat. Fry for about five minutes or until the mixture turns brown and crisp. Remove from heat and serve with the mayonnaise or mustard. The fritters go well with a light salad or as accompaniment for a main course.
