Grilled Broccoli and Lemons
Broccoli is a low-calorie vegetable that has a multitude of health benefits. They are an excellent source of vitamins, minerals and nutrients; most notably Vitamins C and K as well as dietary fiber, potassium and folate. Lemons are also an excellent source of vitamin C, which helps promote overall skin and dental health. When combined, broccoli and lemons are two of the healthiest foods available, helping prevent a wide variety of ailments and disease. For this easy to make recipe, we will be grilling broccoli and lemons to make a healthy, tasty and nutritious appetizer or a dish that can serve as meal in itself.’
500 grams broccoli, cut into 1-inch pieces
3 lemons, sliced into quarters
extra virgin olive oil as needed
salt to taste
pepper to taste
In a bowl, combine the broccoli and the quartered lemons. Season with salt and pepper then drizzle liberally with olive oil.
Heat a grill until you get a high heat, low flame setting. Grill the broccoli and lemons for 10-15 minutes. They should achieve a slightly charred but tender consistency. Remove the broccoli and lemons from the grill. Squeeze out the juice from the lemon on top of the broccoli then drizzle with olive oil. Season with more salt and pepper if desired and serve.
