Healthier Stuffed Peppers

Stuffed bell peppers are a delicious snack. Use lean beef as the main ingredient for your stuffing for a healthier dish. You may also substitute ground chicken or turkey meat for this recipe.



3 green bell peppers
3 red bell peppers
3 tablespoons Worcestershire Sauce
1 can tomato sauce
½ cup Parmesan Cheese
1 cup brown rice
500 grams lean ground beef
4 cloves garlic, minced
1 white onion, diced
salt to taste
pepper to taste
water as needed
olive oil as needed


Preheat your oven at 400 degrees Fahrenheit. Fill a pot ¼ to capacity with water then bring to a boil. Add the brown rice, cover and cook for 30 minutes. While the rice is cooking, heat and place the beef, garlic, and onions for 5-6 minutes. Season with salt and pepper then add the tomato sauce then set aside.
Pit the bell peppers, removing the core and the seeds.
Mix the rice with the beef to create the filling.
Stuff the bell peppers with the filling. Repeat until all the bell peppers or stuffing is used up.
Bake in the oven for 15-20 minutes. Dust with Parmesan cheese on top 5 minutes before you pull them out so that it will melt then serve.
