Ingredients for Lemon Curdtarts
- Sugar 250g
- Butter 250g
- Lemon rind & juice 2 1/2 nos.
- Egg yolk 5nos.
- Place in a clean bowl.
- Add and cream together.
- Soften and add to the other ingredients.
- Remove the zest and add to the butter squeeze. The juice into the mixture. Place in a bain marie and whisk continuously mixture to get too hot as it will curdle the egg.
