Kale Soup

Kale is a green leafy vegetable that is a cultivated form of wild cabbage. The cultivation of Kale was highly encouraged in Britain during World War II, but recently, it has become a very popular dish amongst the health conscious. It is considered as a very healthy food, known to fight cancer and to help lower cholesterol levels. Kale also contains high amounts of Vitamins K, A, and C. For this dish we will be using Kale to make a soup that’s rich and creamy, as well as taking advantage of the vitamins and nutrients that it contains.



500 grams Kale
1 clove garlic, crushed or minced
1 white onion, chopped
2 cups chicken stock
4 potatoes, chopped
1 tablespoon parsley
1 stick butter
salt to taste
pepper to taste


Melt the butter over medium heat in a pot or saucepan. Add the garlic, potatoes and onion and fry for 1-2 minutes. Mix the chicken stock and the kale then bring to a boil. Season with and pepper then bring down to a simmer. Place a lid then cook for 10-15 minutes or until the kale becomes tender. Transfer the soup to a blender or food processor and blend until it reaches a silky smooth consistency then serve.
