Lagos Bologi Salad
Lagos Bologi is a green leafy vegetable that abundantly grows in tropical regions. It is cultivated commercially and best eaten raw in order to be able to absorb all its nutrients. It is a good source of vitamins and minerals, most notably vitamin A and vitamin C as well as calcium and iron. Lagos Bologi is best served fresh in salad, and is very easy to prepare as a light and healthy appetizer or as a first course in meals.
4 cups fresh Lagos Bologi
½ cup goat cheese
1 white onion, sliced into round strips
1 cup raisins
1 tablespoon toasted walnuts
1 cup balsamic vinegar
2 tablespoons freshly squeezed lemon juice
1 teaspoon extra virgin olive oil
salt to taste
pepper to taste
Thoroughly wash the Lagos Bologi then cut into medium sized strips. Add the chopped onions, walnuts, and raisins. Toss the ingredients until they are well combined. Crumble the goat cheese by hand and sprinkle liberally on top of the salad then set aside.
Mix the balsamic vinegar, olive oil and the lemon juice into a bowl. Season with salt and pepper until the flavor is satisfactory. Drizzle the vinaigrette on top of the salad and serve.
