Lamb’s Lettuce and Crispy Bacon Salad

500 grams fresh lamb’s lettuce
2 shallots, finely chopped
½ cup sun dried tomatoes
1 red apple, diced
1 cucumber, sliced
½ cup toasted almonds
1 avocado, pitted and pureed
4 tablespoons extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
Salt to taste
Pepper to taste
1 cup parmesan cheese
In a large salad bowl, mix the lamb’s lettuce, shallots, sun dried tomatoes, apples, almonds and avocado. Toss the salad until all the ingredients are evenly distributed.
Mix 2 tablespoons olive oil and freshly squeezed lemon juice in a small bowl. Season with salt and pepper then whisk vigorously. Drizzle on top of the salad then add the remaining olive oil. Garnish with parmesan cheese then serve.
