Luffa Tomato Soup
Tomatoes are popular the world over. Its versatility allows it to be used in a variety of recipes and dishes. Tomatoes are also very healthy, containing antioxidants, primarily lycopene, which gives it its red color. They are also an excellent source of a wide range of nutrients, vitamins and minerals. Chief among which is vitamins C, K, B, and E as well as potassium, copper and manganese. These result in maintaining a healthy cardiovascular system, overall bone health, and warding off certain types of cancer. For this recipe, we will be using tomatoes combined with luffa to make a flavorful and healthy soup.
2 pieces luffa, cut into bite-sized pieces
2 tomatoes, sliced thinly
2 cloves garlic, crushed
1 inch piece of ginger, thinly sliced
salt to taste
pepper to taste
vegetable oil as needed
In a pot, heat the oil and fry the luffa, tomatoes, garlic and ginger for 5 minutes. Cover with water and bring to a simmer. Season with salt and pepper until the desired flavor is attained. Cover with a lid and cook for 10 minutes. Remove from heat and serve with toasted bread. You may also garnish with basil leaves if desired.
