Malabar Spinach and White Bean Curry
Malabar spinach is a type of vine that is used as a leaf vegetable that grows abundantly in Asia and Africa. Its leaves are generally used as an ingredient in most Asian cuisine. Malabar spinach is served as a soup, or cooked on its own and served over rice. Malabar spinach has many health benefits, as this leafy vegetable is a great source of vitamin A and C, as well as being known to aid the digestive system. For this recipe, we will be using Malabar spinach leaves as the main ingredient for curry, along with white bean. White beans are a great combination with Malabar spinach, as it helps lower cholesterol levels.
500 grams Malabar spinach
2 cups white beans
2 cups coconut meat, grated
4 red pieces red chili, chopped
5 cloves garlic, crushed
4 tablespoons coconut oil
salt to taste
pepper to taste
Remember to soak the beans in water overnight. Wash the Malabar spinach leaves and chop into small pieces. In a pan, heat the coconut oil and cook the leaves until tender. Add the garlic, chili, beans and coconut milk. Season with salt and pepper and cook for 15 minutes or until the chili turns crisp. Serve over rice.
