Orach Pasta

Orach is a variety of spinach that grows abundantly in regions that have cold to temperate climates with dry air and sodium-rich soil. This vegetable typically has purplish-green leaves and is used in salads. They may also be incorporated into pasta sauce as a substitute for basil. For this recipe, we will be using orach leaves to make orach pasta.



500 grams fresh orach leaves
1 red onion, chopped
2 cloves garlic, crushed
1 cup olive oil
1 cup toasted almonds
2 cups spaghetti or fettucine
1 cup tomato sauce
1cup tomato paste
salt to taste
pepper to taste


In a pot bring water to a boil. Add a bit of salt for flavor, and olive oil so the pasta noodles don’t stick together while cooking. Cook until the pasta becomes firm and elastic. Drain the water and set aside.
In a pan, heat the rest of the olive oil then fry the garlic, onions, and toasted almonds for 3-5 minutes. Add the orach leaves then cook until the leaves wilt or until they become tender. Add the tomato sauce and tomato paste then season with salt and pepper.
Pour the sauce on top of the pasta and serve.
