Palaver Sauce

Palaver sauce in actuality, is a stew that is very popular amongst certain regions in Africa. “Palaver” is a Portuguese word that roughly translates to “a debate” or “a quarrel”. Some of the main ingredients of Palaver sauce are long ropey greens and certain spices that evoke feelings of arguing. It has also been said that people slapped one another during arguments using these long greens. Palaver sauce varies in ingredients, depending on where you are. For this recipe of Palaver sauce, we will be using ox tail as our main meat ingredient.



1 ½ kilogram Oxtail
½ kilogram chicken
1 cup vegetable oil
1 cup chicken or beef stock
2 white onions, diced
4 tomatoes sliced
2 cloves garlic, minced
1 kilogram spinach
salt to taste
pepper to taste


In a large pot, place the oxtail, chicken and onions and cover with water. Add chicken stock and season with salt and pepper. Bring to a boil and cook until tender.
While cooking the meats, heat the vegetable oil in a pan then add garlic, tomatoes and the spinach and cook for 3-5 minutes.
Add the meats then season with salt and pepper once more. Cook for 5 more minutes then serve.
