Peach Tomato Salsa
Salsa is a tomato-based dip that is mostly associated with Mexican cuisine. For this salsa recipe, we will be using peaches to give our salsa a sweet and spicy flavor.
1 dozen pieces fresh peaches, chopped
4 cloves garlic, minced
½ cup freshly squeezed lime juice
4 pieces large tomatoes
3 pieces red bell pepper, diced
2 white onions chopped
1 cup jalapenos, chopped
5 tablespoons honey
1 cup cilantro
1 cup vinegar
2 tablespoons red pepper flakes
vegetable oil as needed
salt to taste
pepper to taste
In a bowl, place the peaches and mix with lime juice then add the tomatoes. Mix well then set aside. In a pot, heat a small amount of vegetable oil. Add the garlic, red bell pepper and jalapenos then fry for 1-2 minutes. Mix in the honey, cilantro and vinegar then bring to a boil.
Add the peaches and tomatoes. Season with salt and pepper then top off with red pepper flakes. Cover with a lid then bring the salsa to a simmer. Remove from heat and let cool. Place the salsa in containers and leave in a refrigerator for 1-2 days. Your salsa is now ready to serve.
