Potato Latkes

Ingredients

  • 3 large potatos
  • 1 large onion
  • 1 egg
  • Matzo Meal
  • Garlic Powder
  • Salt
  • Pepper

Instructions

  1. Grate the potatos and the onion by hand (you get a better consistency than with a blender)
  2. Drain off the water
  3. Blend in the egg
  4. Add about 1/4-1/2 cup of matzo meal (not flour!) to firm up the mix
  5. Add garlic powder, salt and pepper to taste
  6. Heat up a deep frying pan and add a little vegetable oil
  7. When the pan is very hot and the oil starts to sizzle, add a small ladle of the mix
  8. When the latka is nice and crispy, flip it and fry the other side
  9. Put it on a few paper towels to drain
  10. See how long the latka stays on the paper towel before someone steals it, if you get the ok, start frying latkes like crazy
  11. Serve with apple sauce and/or sour cream
  12. HINT: The latkes fry faster and taste better(less oily) if you don't make them too thick.
