Rainbow Carrot Salad with Mache and Toasted Pepitas

Rainbow carrots have been called as such because of the variety of hues that they come in. The pigmentation found among fruits and vegetables has been found to be indicative of the nutritional value they contain. Most of us have been imprinted with the information that carrots “should be” orange, but carrots in different shades are composed quite differently from one another, at least in terms of nutrients. Nowadays it has been commonplace to find white, yellow, red, and even purple carrots at your local organic store.

Carrots have always been featured in salads, and now, rainbow carrots have added a way to make them more colorful and appealing. We will be incorporating mache, a salad green, as well as “pepitas”, (squash seeds) for this salad recipe



1 pound rainbow carrots,
½ pound mache, coarsely chopped
1 cup toasted squash seeds
3 tablespoons olive oil
2 tablespoons vinegar
salt to taste
pepper to taste

Peel the rainbow carrots and slice them into very thin strips. Toss with chopped mache then set aside. Mix the olive oil and vinegar into a bowl then season with salt and pepper. Drizzle on top of carrots and mache then garnish with toasted pepitas.
