Rice with truffles recipe

Ingredients

  • 32 ounces truffles
  • 1 small onion, finely chopped
  • 3 cups long grain rice, washed and drained
  • 14 ounces minced meat
  • 20 ounces stew meat, diced
  • 3 tablespoons shortening or butter
  • A dash of salt, as desired
  • A dash of ground cinnamon
  • A dash of ground pepper
  • 1 cup fried pine nuts and almonds, for garnishing
  • 1 litre, 4 cups, water
  • 1 tablespoon salt, for cleaning truffles

Instructions

  1. • Soak truffles in cold water for 15 minutes.
  2. • Peel using a sharp knife.
  3. • Put one litre of water and salt in a pot.
  4. • Add truffles, bring to a boil.
  5. • Chop into medium size pieces.
  6. • Saute stew pieces with shortening until golden. Place aside.
  7. • Saute stew meat with a dash of salt in the same shortening.
  8. • Transfer meat to another pot.
  9. • Add 2 litres of water to the pot and cook for 2 hours. Reserve stock.
  10. • Saute onion with the same shortening on medium heat until transparent.
  11. • Add minced meat, cinnamon, pepper and salt to onion.
  12. • Cook until meat is brown and tender.
  13. • Use 6 cups of stock to cook rice.
  14. • Add rice to stock. Cover pot.
  15. • Bring to a boil for 5 minutes.
  16. • Reduce heat and cook for 20 minutes.
  17. • Spoon rice into a platter.
  18. • Top with truffles, minced meat and stew meat.
  19. • Garnish with fried pine nuts and almonds.
