Roasted Pork with Homemade Mustard Sauce

Roasted pork is a straightforward dish that can be served as the main course for a special meal!



2 pounds pork tenderloin
1 cup chicken stock
1 cup cooking cream
1 cup Dijon mustard
½ cup extra virgin olive oil
1 cup white wine
8 cloves garlic, crushed
3 tablespoons fresh rosemary
3 tablespoons fresh thyme
3 tablespoons fresh tarragon
salt to taste
pepper to taste


Combine the chicken stock, white wine, garlic, rosemary, thyme and tarragon in a large dish to marinate the pork tenderloin in. Leave in the refrigerator or chiller overnight. Remember to massage the mixture into the pork at brief intervals to fully incorporate the flavor. When ready to cook, remove the pork from the marinade and place on a baking rack.
Preheat an oven to 400 degrees Fahrenheit. Rub salt and pepper on the pork tenderloin and slather half the mustard on top. Place the pork in the oven and cook for 30 minutes.
While the pork is cooking, boil the cream in a saucepan and season with salt and pepper. Add the remaining mustard and whisk vigorously. Cook the sauce for 15 minutes. Slice the pork once cooked and pour the sauce on top and serve.
