Rocket and Almond Pesto Recipe

Rocket is a green leafy vegetable similar to arugula. It grows abundantly all over the world, and is widely used as an ingredient for salad. Rocket can be eaten raw, or cooked in sauces for pasta. For this recipe, we will be using rocket as a substitute for basil in the popular Italian sauce, pesto.

1 cup rocket, coarsely chopped
1 cup toasted almonds
1 cup extra virgin olive oil
½ cup parmesan cheese, grated
3 garlic cloves, finely minced
salt to taste
pepper to taste


In a pan or skillet, heat half a cup of olive oil then sautee the rocket, almonds, and garlic for 1-2 minutes. Season with salt and pepper, and then leave the ingredients to cool. Once cooled, place in a blender and food processor then mix until it becomes silky smooth. While mixing, gradually pour in the remaining olive oil. Continue blending until all the oil has been successfully incorporated to the mixture. Transfer the ingredients to a bowl then grate the Parmesan cheese on top. Season with salt and pepper until the desired flavor is attained. You may serve the sauce with any type of pasta or toasted bread.
