Sauteed Turnip and Greens
Turnips are a popular root crop that is prominently cultivated and grown in temperate climates around the world. There are many varieties of turnips. The smaller ones are generally reserved for use in various world cuisines, while larger varieties are considered much more suitable as feed for livestock and cattle. Turnip leaves are also consumed, with a flavor that closely resembles Chinese cabbage and mustard greens. The turnip has been grown as a crop since the mankind’s first foray with agriculture. Turnips also have many health benefits including management of hypertension, fighting certain types of cancer, maintaining good eyesight and aids in healthy weight loss. For this recipe, we will be using turnip greens to make an entirely vegetarian meal that is both healthy and delicious.
500 grams turnip greens, washed and coarsely chopped
1 white onion, finely chopped
2 tablespoons extra virgin olive oil
1 teaspoon brown sugar
salt as needed
pepper as needed
distilled water as needed
In a pan or skillet, heat the olive oil and sautee the onions for 1-2 minutes. Add the turnip greens then cook until the leaves are slightly wilted. Season with salt, pepper, and brown sugar then add water to reduce. Cook for 5 minutes then serve.
