Scallops with Sea Kale

Sea kale is a type of green leaf vegetable that’s closely related to cabbage. Sea kale is rich in Vitamin C and iodine. Sea kale is low in calories and carbohydrates, making it an ideal option for people who are on a diet and want to lose a few pounds.

1 kilogram sea scallops
2 cloves garlic, crushed
1 white onion, diced
1 bay leaf
½ cup extra virgin olive oil
1 cup beef stock
1 teaspoon fresh lemon juice
1 cup white wine
salt to taste
pepper to taste


In a saucepan, heat the olive oil then fry the garlic, onion, and bay leaf for 5 minutes. Mix in the white wine then add the sea kale. Season with salt and pepper and cook for an additional 10 minutes then set aside.
Preheat an oven at 200 degrees Fahrenheit. Season the scallops with salt and pepper then place in the oven for five minutes or until they turn golden brown.
Mix the sea kale with the scallops in a dish. Season once more with salt and pepper, garnish with a few drops of lemon juice then serve.
