Sea Beet, Smoke Bacon and Potato Tart

Sea beets are a green leaf vegetable that’s closely related to beetroots, sugar beets and Swiss chard. They are indigenous to most coastal areas such as Europe, North Africa and South Asia. Sea beets grow well in areas with a lot of sun and a moist environment. Sea beets were cultivated since the time of the ancient Romans, mostly used as food and medicine. Sea beets are a very healthy source of vitamins, minerals and nutrients. Studies have shown that they help prevent certain types of cancer, as well as promoting the health of most of our important bodily functions. For this recipe, we will be making a savory tart with sea beets as the primary ingredient.


Premade pastry crust
¼ cup purified water
1 large potato, diced
200 grams smoked bacon
500 grams sea beets
½ cup cream
2 tablespoons milk
salt to taste
pepper to taste
vegetable oil as needed

In a pan, heat the oil then fry the bacon until crisp. Add the potatoes, milk and cream and cook for 15 minutes. Boil a pot of water and cook the sea beets for 5 minutes, stirring constantly. Drain the water and add to the bacon then season with salt and pepper. Cook for 10 minutes.
Place the filling in the crust and bake at 300 degrees Fahrenheit for 30 minutes.
