Spinach is a green leaf vegetable that is grown and eaten in most parts of the planet. It is one of the most nutritious foods around as well as being full of vitamins, antioxidants and minerals. Studies have also shown that spinach contains anti-inflammatory agents and cancer fighting properties. However, spinach also contains a potentially harmful toxin known as oxalic acid. Fear not the spinach though, as simply boiling it in water for 1-2 minutes completely eliminates the acid. For this recipe, we will be making a rich and creamy soup featuring spinach as the primary ingredient.
500 grams fresh spinach, washed and coarsely chopped
1 large white onion, diced
1 large potato, peeled and diced
3 cloves garlic, crushed or minced
1 cup chicken or vegetable stock
1 cup fresh milk
¼ stick butter
lemon zest as needed
¼ cup cooking cream
salt to taste
pepper to taste
In a pot or saucepan, melt the butter then fry the onions, potatoes and garlic for 3-5 minutes. Add the stock and bring to a boil then immediately add the milk. Let the soup simmer for then minutes. Add the cream soon after. Remove from heat and allow the soup to cool for a brief period, then transfer to a blender. Blend until smooth then serve.
