Steak salad is an easy to prepare meal that combines the best of both meat and vegetable. Take a sumptuous and juicy steak and enjoy it guilt-free by accompanying it with a healthy and fresh salad.
1 head iceberg lettuce, shredded into medium-sized strips
1 cut rib-eye steak
1 white onion, chopped
6 tomatoes, sliced
1 cup feta or goat cheese, crumbled
1 cup red wine
½ cup apple cider vinegar
½ stick butter
1 tablespoon freshly squeezed lemon juice
salt to taste
pepper to taste
In a pan, melt the butter over medium heat, then cook the steak until medium rare. Remember to baste the steak from time to time with the melted butter. Remove from heat and cut into bite-sized strips once slightly cooled.
Mix the apple cider vinegar, lemon juice and red wine in a bowl and whisk. Season with salt and pepper then set aside for your vinaigrette.
In a large salad bowl, place the iceberg lettuce, onions and tomatoes then toss until evenly distributed. Sprinkle the crumbled feta or goat cheese on top. Add the strips of steak then drizzle the salad with the vinaigrette. Serve in a plate or bowl.
