Stir Fried Yu Choy Sum
Yu Choy, or Chinese greens, is similar in appearance to Chinese Broccoli. Some of the most notable differences are thinner stalks and the presence of yellow flowers. It is a good source of vitamins, minerals and nutrients. Its oil, once extracted, has many health benefits. This includes helping the body attain a balance between bad cholesterol and good cholesterol. Yu Choy also has high levels of mono-saturated fats, also known as good cholesterol. Yu Choy is abundant in Vitamin E, which is an potent antioxidant, to help fight the effects of cell deterioration and cancer. Studies have shown that Yu Choy is a great benefit for our internal organs, namely the kidneys and liver.
500 grams Yu Choy or Chinese greens, washed and cut into short strips
5 cloves garlic, minced
1 tablespoon vegetable oil
½ cup chicken or vegetable stock
salt as needed
pepper as needed
In a pan or wok, heat the vegetable oil then sautee the garlic for 1-2 minutes. Throw in the Yu Choy and chicken stock. Cover and let simmer for 5 minutes or until the Yu Choy is tender. Season with salt and pepper then serve over rice.
