Sweet Pepper and Lentil Soup

Lentils are a legume rich in nutrients, vitamins and minerals. They are an excellent source of dietary fiber. Legumes are known to help prevent certain diseases such as hypertension, diabetes and heart disease. Lentils are also packed in protein, folate and iron. Including lentils in your diet goes a long way to promoting overall health, as they contain no cholesterol. For this recipe we will be using lentils as the main ingredient for a healthy and nutritious soup.



2 cups lentils
2 cloves garlic, minced
1 cup chicken stock
1 bay leaf
1 onion, finely chopped
¼ cup peppercorns
½ teaspoon cumin seeds
1 cup red bell pepper, diced
½ cup carrots, diced
½ cup celery, diced
vegetable oil as needed
salt to taste
pepper to taste
water as needed


In a pot or saucepan, bring water to a boil. Place the lentils together with the bay leaf. Add the chicken stock and simmer. While you are waiting for the lentils to cook, heat the vegetable oil and add ground peppercorns, garlic, onions, onions, carrots, celery, and bell pepper and cook until the carrots turn tender. Add the lentils simmer for another 10 minutes. Throw out the bay leaf and place the soup in a blender. Blend until smooth and serve.
