Syrian stuffed zucchini in yoghurt recipe

Ingredients

  • 48 ounces small zucchini
  • 21 ounces minced meat
  • 3 tablespoons fried pine nuts
  • 1 cup water
  • 1 cup shortening or butter
  • Salt and pepper, as desired
  • 64 ounces cooked yoghurt

Instructions

  1. • Wash well zucchini.
  2. • Remove stems with a sharp knife.
  3. • Hollow zucchini with an apple corer.
  4. • Wash inside and out. Drain.
  5. • Fry zucchini with shortening until golden. Place aside.
  6. • Fry minced meat with a dash of salt and pepper until tender.
  7. • Mix half the quantity of pine nuts with minced meat.
  8. • Stuff zucchini with meat. Do not over stuff.
  9. • Shake to spread the filling.
  10. • Arrange stuffed zucchini in a pot.
  11. • Pour 1 cup water. Cook on low heat for 15 minutes.
  12. • Add stuffed zucchini to cooked yoghurt.
  13. • Cook on medium heat for 30 minutes.
  14. • Place stuffed zucchini and yoghurt in serving plates.
  15. • Sprinkle on top minced meat and pine nuts.
  16. • Serve accompanied with cooked rice.
