Vegetable Egg Sauce with Fluted Pumpkin
Egg sauce features in most world cuisines, and can be incorporated with a variety of ingredients making it a very versatile dish. For this recipe of egg sauce, we will be adding the leaves of fluted pumpkin, a tropical vine that’s a good source of iron and potassium as well as antioxidants and protein. Fluted pumpkin has also been known to help prevent cancer, as well as being beneficial to the skin. This dish is easy to prepare and can be served over rice or potato.
1 cup fluted pumpkin leaves, chopped
1 cup olive oil
1 whole onion, chopped
2 tomatoes, chopped
1 red bell pepper, chopped
1 teaspoon thyme
1 teaspoon rosemary
salt to taste
pepper to taste
In a pan or skillet, heat the olive oil then place the fluted pumpkin leaves, onions, tomatoes and bell pepper then fry for 1-2 minutes. Season with thyme, rosemary and salt then set aside. In a bowl, mix the eggs until they achieve a light fluffy consistency. In a saucepan, mix all the ingredients together and simmer for 5 minutes. You may add a dash of whiskey or rum if desired.
